I have always loved going to weddings. Weddings are such a happy time because everyone is celebrating love. However, throughout the years, I have liked weddings for different reasons. Right now, it’s about celebrating love and no one is really sad, but when I was a child, I used to like to go to weddings to see the bride all dressed up and the most important part… THE CAKE.
Sometimes you feel like you’ve had such a bad day that you just need to do something that will make you feel better… anything to get your mind off of all the bad things and just focus on what you are doing in the moment. Baking is that thing that helps me get through those bad times. I feel like no matter what I bake, I have a recipe right beside me to help me out.
D- was going to a football draft meeting turned potluck lunch a few weeks ago. When he told me about it, I was first excited about going to his drafting because I always wanted to see how that goes. But then immediately after that thought, I said “Let’s make dessert!” I am always in the mood to make cupcakes, but I never really have a reason to make them, so this was the perfect opportunity. I went browsing through my cookbooks one night and found the perfect cupcake recipe in Flo Braker’s book.
Baking is such a fun hobby to take on. Not only do you get to enjoy yourself by doing what you love, but your friends and family can enjoy them too. They’ll secretly love you more (than they already do of course 🙂 ). Since I don’t have much family and friends around me, I either give them to my co-workers and/or D-‘s co-workers. It boosts up morale in the office and you get to hear what people think of them. I love how I can bake treats for D- and his co-workers because with much stress at work, there’s a little glimmer of happiness when treats are being passed around.
I used to make these little cupcake bites from Bakerella quite a few times on my own (you can see my halloween version here). I feel it is a very relaxing process to make these because there are so many steps, but yet it’s very simple to make. It’s almost like an assembly line. Such order can make you feel like everything is in your control. You can change the colors of the candy melts or the cake and frosting in the middle, but the whole process usually stays the same, which I like. I also like making the chocolate go on perfectly (no cake is showing). It is quite difficult, but once you get it, it feels so good!
Tiramisu has grown to be one of my favorite desserts. It’s quite funny actually. I am not a big fan of coffee, but yet I love the smell of it. Every time I walk into a coffee shop, I just sniff away. Although, I’m not so fond of the smell lingering on the clothes after hanging out in the shop for a couple hours.
Anyway, for as long as I can remember, I have enjoyed coffee cake, coffee candies, and now, tiramisu! After seeing this cupcake recipe online, I knew I had to try it. My family loves tiramisu as well and I wanted to broaden my baking skills. This recipe was perfect because it’s a little more complex, but still simple enough to follow.
The first post of the new year. How was everyone’s holiday’s? Too short? I agree. I wanted more time to bake and more people to bake for. However, I did get a chance to bake these cupcakes as my first baked good of the year. All the cupcake recipes that I have tried from scratch never turned out too great, so I had to try a classic cupcake. I heard so many good things about this recipe, that I just had to try it.
I decided to make Bakerella’s cupcake bites for my company potluck for Halloween. I love to make them, even though it is a long process. The first time I made them, they didn’t turn out as great because I didn’t master the dipping process. This is my third time making them, and I think I pretty much got it down. It took me about 3 hours to make. Some people might say that’s too much work, but I find it so relaxing and satisfying to see my cupcake bites turn out just right. They were a big hit at the potluck. These are definite crowd pleasers because they look so cute and taste delicious.
