This was my chance to go ahead and mess around with a recipe. Since I enjoyed this recipe so much, I wanted to try it again. However, instead of blueberries, I decided to go chocolate for a couple reasons… I had many of them I needed to use up and chocolate chips! Need I say more?
I first got these little ramekins months ago when I went on a shopping spree at Cost Plus World Market. I seriously can spend a good few hours in that place. I’ve been meaning to make some kind of pudding in these, but life got in the way.
But an opportunity arose, and I took it. I was having this big lunch at my home with my parents and my boyfriend, D. this past weekend to celebrate Chinese New Year, and it dawned on me that morning that I didn’t have any dessert planned for it. So I grabbed my trusty Everyday Food cookbook and found a wonderful recipe to use.
After my somewhat failed attempt to make a blueberry crumb cake a couple months back (the dreaded under-baked middle occurred), I wanted to get this blueberry cake down. Blueberries and cake were meant for each other. It’s the perfect combination of tart and sweet, not to mention that blueberries are super healthy for you. The blueberries just let out their inner juices into the cake and it adds a bit of color to the cake. That’s why I need to get this kind of cake right!
In order to get this blueberry cake right, not only did I try a different recipe, I decided to make them smaller. How small do you ask?
Even though blueberries are not in season yet, we had them in the house. My mom bought them the other day. She figured we can make our own parfaits instead of buying them pre-made at a coffee shop. It’s much cheaper, especially if you get the blueberries in bulk from Costco.
